Carolyn Kay Elliott was born in Shelby County to Riley Bryant Oliver and Bessie Kay Oliver on July 11, 1945. She married Amos Elliott on February 23, 1963, in Timpson, Texas. She was a retired Neuro-ICU nurse at Methodist Hospital in the downtown district of Houston. Carolyn loved to bake her cakes and pies, almost over cooking for every holiday. There was always so much food left over. She was well known for her cornbread stuffing amongst her friends and family that many came over during the holidays to help make the 10 to 12 pans. Everyone had cornbread for Thanksgiving and Christmas ready to go. Carolyn was involved in church her entire life. She was a member of Trinity Pentecostal Church of God for many years under Pastor Joe Clark, then there was Fred and Jody Duncan, her dearest friends as her pastors at the Foursquare Church. Lastly, until she could not attend services any longer, she attended Bethel Community Church under Paster Rick Martinez where she joined with members from her Trinity Church friends. Carolyn was well known for taking in and taking care of many souls her entire life. She leant out a helping hand whenever possible to whomever needed it.
